Abstract
本實驗主畏目的是探討不烔來源的醣類。蛋白質對缺銅鼠所誘發高膽固醇的影響,繼而觀察鋅、鐵、和銅分佈狀況。將40隻雄性大白鼠(重約50公克),隨機分成8 組,以銅濃度(1 或6ug/g ),醣類(米澱粉或王米澱粉,62.2% ) 及蛋白質(酪蛋白或黃頭蛋白,15% )作 2 * 2 * 2 factorial 的7 週實驗設計。實驗結束時,收集動脈血,肝臟,脾臟,和心臟作分析,項目包括:血清總膽固醇(CS),高/低密度脂蛋白膽固醇(HDL-C/LDL-C) ,三酸甘油酯(TG),藍胞漿素,肝臟總脂質(TL),膽固醇(TC)和各組織礦物質濃物。結果顯示:食物攝取量無顯著差異,米澱粉/酪蛋白/有銅組分別有顯著較優的體重及餵食效率(P<0.05)。餵食米澱粉組比玉米澱粉組具較低的CS'LDL-C'TL'TC'(P<0.0050) ;而黃頭蛋白組亦比酪蛋白組有較低的CS'LDL-C'TL'TC'(P<0.0100) ;邊緣性缺銅不影響CS但使血中TG值降低(P=0.0001),且影響肝TC的分佈(P=0.0026)。此外礦物質分析方面,邊緣性缺銅使肝、心、和脾中鐵明顯的蓄積(P<0.0050),除肝臟銅不愛缺銅影響外,心、脾、和血清濃度(P<0.05)和藍胞漿素(P=0.0001),在缺銅皆會降低。米澱粉除使脾臟銅濃度降低外(P=0.0039),對其它組織中礦物質分佈影響不大;黃豆蛋白組比酪蛋白組能提升組織中礦物質濃度,血清中鋅量受各項實驗變因影響,但肝臟鋅維持恒定,不受干擾。
