Abstract
糧食與營養安全對健康至關重要,然而許多地區仍面臨挑戰。 本研究建立糧食安全指數 (Food Security Index, FSI) 與營養安全指數 (Nutrient Security Index, NSI)以評估臺灣的糧食與營養安全狀況,並分析對星球健康飲食 (Planetary Health Diet, PHD)的遵循情形,同時運用生命週期評估(Life Cycle Assessment, LCA)方法,探討不同地區/國家的二氧化碳排放量,提供對環境影響的綜合點。本研究使用2017至2020年臺灣國民營養健康調查資料,依據糧農組織(Food Agriculture Organization, FAO)方法,估算12,120位受訪者的營養不足盛行率(Prevalence of undernourishment, PoU)。另採用FAO的RM.weights套件,計算2022至2023年間2,879位受訪者的糧食不安全經驗量表(Food Insecurity Experience Scale, FIES)。FSI與NSI分別根據糧食供應需求比(Supply to need ratio, S-Nr)與實際攝取需求比(Intake to need ratio, I-Nr)進行推估,數據來自國民營養健康調查與糧食收支表 (Food Balance Sheet, FBS)。此外,本研究也計算星球健康飲食得分 (Planetary Health Diet Score, PHDS),評估各國飲食遵循情形,並結合FBS比較12個地區/國家的二氧化碳排放量。 結果顯示,臺灣2017–2020年間PoU低於2.5%,2022–2023年FIES為1.1%。FBS數據顯示蔬菜的S-Nr為0.84,水果為0.77,乳品僅為0.47;鈣質的I-Nr為0.56。而根據(Nutrition and Health Survey in Taiwan, NAHSIT)資料,穀類/根莖類的S-Nr為0.97,乳品為0.36,蔬菜/水果為0.71;纖維的I-Nr為0.58,鈣質為0.56,維生素D為0.49。臺灣在分析的國家中PHDS得分最高,遵循比例為48.55%;巴西相對較低,為31.06%。研究亦顯示星球健康飲食遵循度與CO₂排放呈現中度負相關(r = - 0.413)。
