Abstract
本篇研究目的為探討膳食油脂中不同總量與型態之脂肪酸對倉鼠體重、體脂蓄積及血脂代謝之影響。實驗採用60隻7週齡雄性倉鼠,飲食以AIN-93M為主,經過一週的適應期後,隨機分成6組,分別給予5% (w/w)、15%及20%大豆油,簡稱為S5、S15及S20組和5%、15%及20%實驗調和油,簡稱為M5、M15及M20組,調和油組成為含60%單元不飽和脂肪酸,而多元不飽和與飽和脂肪酸比值為5(MUFAs 60%, P/S ratio 5),實驗期間自由攝取飲食和水,每週固定測量體重和攝食情形,12週後予以犧牲。結果顯示S20組的體重和體重增加量顯著大於其他五組,主要增加脾臟、腎臟、副睪及腹膜後白色脂肪組織重;在S組間,當油脂攝取量增加,體重、體重增加量及脂肪重會顯著上升,而M組則無顯著差異。M15血清低密度膽固醇濃度顯著低於S15組;S20與M20組相比,顯示S20組有顯著較高的瘦體素、胰島素濃度及促三酸甘油酯累積之酵素lipoprotein lipase(LPL),而促脂肪分解酵素acetyl-CoA oxidase (ACO)和carnitine palmitoyltransferase-1 (CPT-1)則顯著較低。因此,在高油飲食下,特殊比例脂肪酸的調和油會藉由顯著降低胰島素濃度、LPL酵素活性及顯著增加肝臟脂質分解酵素活性來防止體重和體脂蓄積。
