Abstract
康普茶是一款擁有兩千年歷史的發酵飲品,它所含的紅茶菌 (SCOBY) 屬於共生菌,囊括數以千計的細菌和酵母菌。根據過去多篇科學研究證實康普茶對於改善人類腸道菌叢具有助益,並能夠抗高血壓、抗菌、抗腫瘤,和預防心血管疾病、糖尿病及神經退化性疾病等。
依照世界衛生組織之官方統計,因全球軟性飲料的過量攝取,已對多數國家人民的健康造成巨大威脅,易產生肥胖、心血管、糖尿病、腸胃道、肝腎和癌症等疾病,因此獲得醫療界的廣泛關注。康普茶被認定為最適合替代軟性飲料的健康飲品之一,由於它的口感酸酸甜甜,具有微量氣泡和特殊香氣,喝起來猶如香檳,但本身近乎無酒精且含糖量低。本次研究以「藥食同源」概念作為核心,將發酵食品與中草藥運用生物轉化融合的方式進行發酵,以達提升或改變食材及藥材特性的成效。
本研究主要進行化學成分分析與生物活性檢測,結果顯示:經過基礎發酵3天,再二次發酵4、7、11天的紫蘇康普茶相較基礎發酵7~14天之紅茶康普茶的總多酚含量平均約少1.397 μg EAE/mL,而經過基礎發酵7天,再二次發酵3、7天的紫蘇康普茶則相較基礎發酵10~14天之紅茶康普茶的總多酚含量平均高出0.961 μg EAE/mL;經過基礎發酵3天,再二次發酵11天之紫蘇康普茶的總黃酮含量達到128.199μg RE/mL,遠高於其他不同發酵天數及藥材組合的所有樣品;利用HPLC檢測到紫蘇二酵紅茶康普茶中有迷迭香酸存在,證實其潛在抗氧化、抗發炎和抗癌功效;紫蘇二酵紅茶康普茶的DPPH自由基清除效能於CI=95%的情況下,在不同酸鹼值(pH=2、pH=7以及pH=10)之間並無顯著差異,且各種濃度下的清除效能皆優於基礎發酵的紅茶康普茶,其ABTS自由基清除效能則相當於正標準品 Trolox 等價抗氧化能力 30.28 μM;培養時間為72小時的MTT細胞存活率試驗檢測出,樣品在低濃度(1% (v/v))條件下,紫蘇二酵紅茶康普茶對於人類非小細胞肺癌細胞A549之抑制能力相較基礎發酵之紅茶康普茶多了7.176%,對比人類三陰性乳腺管癌細胞BT549則高出2.227%。
藉由前述之實驗結果可知,透過康普茶與紫蘇所進行之生物轉化融合作用製成之產品,可提升兩者部分對人體有益的有效成分。
