Abstract
褪黑激素 (melatonin) 為調節晝夜節律的荷爾蒙,其在肥胖者與停經後婦女體內分泌量較少,然而,目前無研究證實攝取富含於蕃茄中的褪黑激素能否改善睡眠。本研究的目的為探討有睡眠困擾的停經後肥胖婦女攝取8週蕃茄後,是否能提升循環褪黑激素濃度進而改善睡眠品質、體位數值及代謝指標。以三段四極桿式質譜儀測量牛蕃茄、黑柿蕃茄及市售蕃茄汁中褪黑激素含量,結果發現牛蕃茄中褪黑激素含量最高,故以牛蕃茄進行人體試驗。人體試驗於2017年10月起,在臺北醫學大學進行,將受試者隨機分為控制組及蕃茄組,實驗為期8週,隔週進行睡眠品質評估、體位測量及營養教育。蕃茄組每日睡前兩小時需攝取250 g蕃茄。於實驗期第0、8週收集血液及尿液樣本評估代謝指標、發炎指標、安全性及褪黑激素代謝物(6-sulphatoxymelatonin, aMT6s) 的改變。共36人完成實驗,蕃茄組匹茲堡睡眠品質分數 (Pittsburgh sleep quality index, PSQI) 隨時間有顯著下降的趨勢,P-trend=0.0297。相較於第0週,蕃茄組第8週的睡眠品質、睡眠延遲時間、睡眠長度、睡眠效率、睡眠困擾、日間作息失調皆顯著改善。第8週時蕃茄組尿液aMT6s濃度顯著高於控制組約10倍。因此,停經後肥胖婦女睡前攝取蕃茄能增加循環褪黑激素濃度並改善睡眠品質。
