Abstract
本研究的目的是探討高劑量 β-胡蘿蔔素在攝取不同油脂大白鼠體內之利用率,進而研究 β-胡蘿蔔素在脂質代謝上所扮演的角色。將80隻Wistar品系雄性大白鼠(重約 250公克) ,隨機分成八組,以 β-胡蘿蔔素 (0.2 % ,給予或不給予)、脂質種類 ( 黃豆油或豬油 )及脂質濃度(5 %或15 %) 作 2×2×2 factorial的設計,於第3週及第6週分別宰殺大白鼠,取血液及肝臟,測定血清與肝臟中三酸甘油酯及總膽固醇含量,血清中並分析低密度脂蛋白膽固醇及高密度脂蛋白膽固醇含量,同時利用 HPLC分析血清及肝臟中β-胡蘿蔔素、維生素 A含量。結果顯示:食物攝取量無顯著差異;不論是否給予 β-胡蘿蔔素,高黃豆油組有顯著較高的最終體重及餵食效率( P <0.01)。脂質分析方面,黃豆油/給予β-胡蘿蔔素組之血清三酸甘油酯高於黃豆油/不給予β-胡蘿蔔素組,豬油組有相反的結果( P=0.0007);第3週之肝臟三酸甘油酯,高黃豆油組顯著高於其它組 (P<0.05),而第 6 週發現給予 β-胡蘿蔔素會降低肝臟三酸甘油酯 (P=0.0051) ;血清中總膽固醇、高密度脂蛋白膽固醇及低密度脂蛋白膽固醇,於第 3週無顯著差異,第6週則是高油組高於低油組(P<0.05),且血清β-胡蘿蔔素濃度與高密度脂蛋白膽固醇/低密度脂蛋白膽固醇比率呈負相關 (r=-0.35,P=0.0374)。第 3週之肝臟膽固醇在高油時,黃豆油組高於豬油組,低油時則相反 (P=0.0001),第6週時,高黃豆油組顯著高於其它組(P <0.005)。血清及肝臟中 β-胡蘿蔔素有相同的趨勢,第 3週時,高油組顯著高於低油組( 血清,P=0.0028;肝臟,P=0.0001),且高豬油組高於高黃豆油組(p<0.05)。β-胡蘿蔔素的給予對於血清維生素 A在第3週時無影響,第6週時則會降低;肝臟維生素A則會因β-胡蘿蔔素的給予而上升。
