Abstract
本研究擬探討食用核桃對心血管疾病危險因子之相關性。試驗設計採隨機、交叉試驗,收案時間為2015年4月至12月,招募對象為羅東博愛醫院員工,條件符合代謝危險因子任二項加膽固醇 (total cholesterol, TC)≧ 200 mg/dL或低密度脂蛋白膽固醇 (low density lipoprotein cholesterol, LDL-C)≧ 130 mg/dL者。資料收集包含體位測量 (身高、體重、體脂肪、頸圍、腰圍、臀圍、大腿圍、血壓) 及血液生化值 (禁食血糖、胰島素、三酸甘油酯、TC、高密度脂蛋白膽固醇 (high density lipoprotein cholesterol, HDL-C)、LDL-C、肌酸酐) 與飲食紀錄及飲食知識態度及行為 (knowledge attitude practice, KAP) 問卷。共計有34名員工 (11位男性、23位女性) 完成試驗,結果顯示頸圍、腰圍、臀圍、大腿圍、血壓、TC、HOMA-IR及非高密度脂蛋白膽固醇 (non high density lipoprotein cholesterol, non-HDL-C) 在核桃介入後顯著降低。結論:具高度心血管疾病風險的醫院員工,在每天食用56 g的核桃持續8週後,達顯著改善心血管危險因子。
