Abstract
研究目的是為了解青少年飲食維生素B1攝取量,是否會影響血液維生素B1
值及情緒和課業表現。研究於2007年在台北縣市與新竹地區徵求國中學生為研究
對象。收集青少年體位資料與血液生化值與分析血液維生素B1值,並以自填式
問卷收集基本資料、3天飲食紀錄、飲食行為與型態、課業與情緒表現。共收集
56位有效樣本,男生26人(46.4%),女生30人。結果得男生每日飲食維生素B1攝
取量為1.01 ± 0.58毫克,女生為0.73 ± 0.70毫克。飲食總攝取量增加,其維生素
B1攝取亦多。飲食維生素B1攝取量與血清維生素B1、高密度脂蛋白膽固醇濃度
有正相關;其亦與身體質量指數及血清總膽固醇、三酸甘油脂、低密度脂蛋白膽
固醇濃度有負相關,但皆無顯著意義。青少年在家用餐的次數越多者其維生素
B1攝取量越多,課業表現程度與情緒穩定程度亦呈越好趨勢,但是無顯著意義
存在。結論雖然增加維生素B1攝取量對體位、血液生化值、課業及情緒表現沒
有顯著的影響,但是都有較好的趨勢。
