本研究目的在探討以不同的大豆蛋白胃蛋白酶水解物和大豆異黃酮素投予實驗動物,觀察大豆蛋白中之不同成分對於代謝症候群大白鼠指標症狀的影響。雄性 WKY 大白鼠以高油高果糖飲食餵食四週以誘發代謝症候群,之後隨機分成以下五組:SI 組 (7% 大豆分離蛋白 + 7% 酪蛋白)、SS 組 (5% SSP (大豆蛋白胃蛋白酶水解物上清液部分) + 9% 酪蛋白)、SP 組 (5% PSP (大豆蛋白水解物沈澱部分) + 9% 酪蛋白)、SF組 (14% 酪蛋白 + 異黃酮素 (相當於 7% 大豆分離蛋白中之異黃酮素含量)) 及 S 組 (14% 酪蛋白)。結果顯示:飲食中添加大豆分離蛋白、大豆蛋白水解物和大豆異黃酮素皆可顯著地降低代謝症候群大白鼠腹部脂肪堆積、血漿總膽固醇和三酸甘油脂濃度 (p < 0.05)及降低腹腔注射葡萄糖後血漿葡萄糖和胰島素濃度的上升 (p < 0.05),並且可顯著增加血漿和脂肪組織中 adiponectin 的濃度及抗氧化酵素活性 (p < 0.05)。由研究結果推論,大豆蛋白的攝取可藉由改善大白鼠體內血脂異常、胰島素抗性、降低氧化壓力、降低體脂肪的堆積並增加體內 adiponectin 的濃度以達到延緩代謝症候群的進展的功效。
