Abstract
國人近年來越來越重視養生保健,因此各種具降低血脂之機能性食品日漸受到重視及青睞,而過去有研究指出大豆中的大豆異黃酮具有降低血脂的功效,且aglycone形式之genistein和daidzein吸收速率較glucoside形式異黃酮快。本研究目的在評估攝取大豆異黃酮強化之豆漿後對體內血脂質濃度的影響。受試者為24名健康成年人,其血膽固醇濃度介於200-300 mg/dL,並隨機分配至控制組或實驗組,每位受試者均參與三階段的實驗,分別為調整期2週、實驗期12週及排空期2週,整個實驗將進行16週。於0、2、6、10、14及16週收集血液測量生化值,以評估投予大豆萃取物異黃酮豆漿後對血脂之影響。
實驗組於攝取大豆異黃酮強化之豆漿第14及16週後,其血液中膽固醇(Total cholesterol, TC)、低密度脂蛋白膽固醇(low density lipoprotein cholesterol, LDL-C)及TC/HDL-C比值(Ratio of total cholesterol to high density lipoprotein cholesterol)皆顯著低於攝取前。且TC第14及16週顯著低於控制組;LDL-C第10、14及16週顯著低於控制組;TC/HDL-C比值第10、14及16週顯著低於控制組。實驗組氧化遲滯時間(LDL Lag time)第14週時顯著高於攝取前。兩組於攝取前後,僅體脂肪百分比於第14週時有顯著低於第0週,其體重、血壓、肝功能、腎功能、甲狀腺、血液常規檢查及飲食中營養組成皆無顯著差異。
綜合以上結果,攝取大豆異黃酮強化之豆漿可降低TC、LDL-C及TC/HDL-C比值,藉此降低心血管疾病發生,並可延緩LDL氧化遲滯時間。
