Abstract
大豆抗性蛋白 (SRP) 是一種難消化性蛋白質,特性類似於膳食纖維,可能影響脂質代謝及腸道微生物組成。本研究旨在探討SRP對大鼠生長表現、脂質代謝與腸道菌相之影響。實驗使用32隻SD大鼠,分為四組:正常飲食組 (C)、25% 酪蛋白用SRP取代組 (CR)、大豆分離蛋白組 (S),以及25% 大豆分離蛋白用SRP取代組 (SR)。結果顯示,SR組體重增加量與攝食量顯著低於C組;CR組PER最高,SR組最低。SR組肝臟、腎周及副睪脂肪重量均低於C組;S與SR組血清總膽固醇 (TC) 顯著低於C與CR組;血清三酸甘油酯 (TG) 在S與SR組中較低;SR組肝臟總TC與TG顯著降低。此外,SRP的介入使短鏈脂肪酸 (Short-chain fatty acids, SCFAs) 濃度顯著較高,腸道菌f_Bacteroidaceae與g_Bacteroides相對豐富度顯著升高且與SCFAs呈正相關。SRP的部分取代顯著影響PER,此外,不僅會改變腸道菌相,亦促進SCFAs生成,進而影響能量代謝與脂質調控,顯示其對腸道健康的潛在益處。
